There have been attempts, Heronswood Nurseries had a pink Aethiopica, there are several pinks that have been on the market- Aethiopica Glow, Aethiopica Kiwi Blush, Aethiopica Marshmallow, Aethiopica Deep Throat, aeth. pink mist.  None have been very um, successful as far as I know.  Van Meuwen made a big splash with photos of their 'Red Desire' years ago but I don't know if any made it to market.  
A nurserywoman that grew the pink ones told me once that they were varieties that were "not meant to be" because of the chromosome numbers, and the only way they'd grow was at the correct temperatures under the correct trees.  
Others say the pinks are natural variants, ie, A. Glow is a selection of Z. aethiopica 'Crowborough', with a white and pale-pink spathe.
I think Tony sold some colored variants of aethiopica such as Diva Maria, that had some purple on it.
