I may be showing my age here, but two books I've always found useful about
vegetables are the old version of Ortho's _All About Vegetables_ and Jim
Crockett's original _Crockett's Victory Garden_ , both published in the
late seventies, possibly reprinted endlessly since then.  You have to wade
through a lot of chemical nonsense, but both give excellent basic info on
veggies.
