Add to the uses for cukes--Ms Fatma make a cold pasta sauce of cucumbers, garlic, cracked black pepper, and yoghurt. Quite tasty.

You can chop the peppers and freeze them without blanching or anything. If
you have a Tilia or something to suck the air out of the bags, much better,
but it will work regardless. You can freeze stuffed peppers as well, cook
the filling first though. The texture will not fool anyone but they are
still good. You can pickle pepper strips; or you can let them ripen, roast
and peel, then puree with a little garlic for pepper spread. That can be
easily frozen too. Peppers are so forgiving, you can let them sit on the

You can dry tomatoes for snacks, or make roasted tomato sauce in the oven
and freeze it for later. Very easy, no canning equipment required.

salad a lot this time of year. Cantaloupes can be chunked up and frozen with
some syrup, again the texture will not fool anyone but it's okay in fruit
salad (still a tad frozen) or in smoothie kind of drinks later. I've heard
of cantaloupe pickles but never tried it; and I made cantaloupe jam once.
Note the word "once".
And if you work - I can't remember - it's easy to get rid of your extras. I
even know people who WANT zucchini, imagine that.

Most years I would agree with your folks, but not this year.
My 6 plants have yielded more than we can eat. My family is tired of
stuffed peppers :) They are huge ones too....good 5 -6 inches. Another
round is about ready, looking into cutting them and freezing for stews
etc over the winter... anyone done that?
I am also going to have an over aboundance of tomatoes ....and cucumbers
.. and cantalope... only a couple of watermelons tho. Sweet corn didn't
make it.... the few ears where harvested by some critter.
I guess this series of rain, hot weather was perfect for the veggie
garden. I planted less than I usually do since I didn't think I would
have time to preserve the extras, so only planted what we normally could
eat..... sigh.... hum, if they continue at this pace, wonder if I could
offer it on freecycle.....
