Here goes!

Cucumber-Tomato Salsa

2 medium cucumbers, peeled, seeded and chopped
2 medium tomatoes, seeded and chopped
1/2c green pepper, seeded, deribbed, and minced
1 jalepeno pepper, seeded, deribed and minced
1 small onion, chopped
1 clove garlic, minced
2T fresh lime juice
1t fresh parsley, chopped
2t fresh cilantro, chopped
1t fresh dill weed, chopped (or 1/2t dried)
1/2t salt or to taste

Stir all ingredients together in a medium bowl. Cover and refrigerate for an hour. Serve with tortilla chips. Note: If cucumbers have not been waxed, leave one unpeeled for additional color and nutrition.
