I believe the pods will pop open when ready and the seeds will fly, so obviously you want to get it before that happens. But you also don't want to detach the pod too soon - you want them to ripen as much as possible. I would think you should watch for the pod to turn a tan color, then check them daily for signs of the pod beginning to split, then harvest. Or, you could tie a small paper bag around the pod to catch the ripened seed.
