Yum! That sounds delicious. I absolutely agree with you, Bonnie. The only canned vegetable I buy is green beans because I like them cold with salad dressing, and I only buy frozen ones when I make vegetable beef soup, which is hardly ever. Soup for a one-person household is an exercise in futility. :-) I eat very little meat, but I eat vegetables all the time. I was in heaven the day they started putting salads in sacks. One of them lasts me a week, and considering I eat it for two meals everyday, that's a bargain.

Fresh for all veggies is NOTHING like canned and only little like frozen.
Once you start using fresh, it is difficult to substitute. Tonight, we are
having fresh asparagus soup...cooked with shallots in chicken
broth....can't wait until it is ready.

Cathy: This is where I lucked out big time with my kids. Because I'm am not much of a veggie eater, it really did work out well that during their very young years, their dad was at home with them in the evenings while I worked pm shift and since he loves ALL veggies, that is what they learned to eat and love. So my kids do eat brussels sprouts, and mushrooms, and spinach, cabbage, sauerkraut, and tons of other veggies I won't even get near. They did however, teach me to like fresh spinach, so I guess there's always room for improvement. I'd never had fresh spinach growing up...just that nasty stuff in cans, so I truly didn't know what I was missing until my son convinced me to try it. Now it's one of my favorites!

I agree that its a lifestyle growing up issue. My son in law doesn't <br>eat vegetables, period. None. He eats meat, potatoes, bread, and <br>macaroni and cheese.
