Humingbird Cake

For Cathy & anyone else who might want to try this.
3 C flour
2 C sugar
1 tsp @ baking soda, salt & gd cinnamon
3 eggs, beaten
1 C veg oil
1 1/2 tsp vanilla
8 oz can crushed pineapple, undrained
1 C chopped pecans
2 C chopped bananas
Comb 1st 5 ingredients in lg bowl. Add eggs & oil stirring until dry ingred r 
moistened.  Do not beat. Stir n vanilla, pineapple, pecans & bananas.  Spoon 
batter n2 3 greased/floured 9" rd cake pans.  Bake 350 for 30 min or till 
tooth pick inserted in ctr comes out clean. Cool n pans 10 min; remove f/pans & 
cool cptly.  Spread frositng btwn layers, top & sides.  Sprinkle 1/2 C chopped 
pecans on top.
Frosting
    8 oz cream cheese, softened
    1/2 C butter
    16 oz pkg powdered sugar
    tsp vanilla
Comb c. cheese & butter, beating till smooth.  Add p. sugar & vanilla beating 
till light & fluffy.
