Usually I end up driving out to South Carolina or something when it's this
time of year. :)
I know that the Morton Arboretum is open this time of year, but there's not
much to do. Although on a clear winter day it's fun walking through
Pinaceae.
I believe that Bernheim (in Kentucky) is open as well, and they have a
great holly collection that probably looks great right now. There's
also a decent collection of conifers.
