Kitty, you have been cracking me up lately!  You're on a major
roll:-)

I think I have read that the root is inedible; bitter or something. 
I suppose the original carrot root was not dissimilar, but being
really hungry, somebody ate it and didn't die so people started
collecting them and then, as with other food items, growing them on
purpose and then selecting for the best, etc., etc. until we have the
carrot we know today.
