That one sounds great, Lynda.  I can't wait to try it or a variation thereon. 
 I once had a recipe for eggplant cooked with rice and canned tuna that was 
very good, but I have lost it somehow.  Raw rice and eggplant were somehow 
mixed, and the ep provided the moisture to cook the rice.  It's been a lot of 
years, and memory fails me as to how it worked out.  Anyone ever hear of one 
like that?
