What about nursing homes? My dad used to give his surplus to them.

I have a zillion carrots here. I dug up about a 3rd of them and already have 
3 shopping bags full. I wish the darn shelters/pantries around here would take 
fresh veggies, but they don't. 

I plan on trying to freeze some for stews and cooking etc, but how can I do 
what ever the groceries store do.....keep them fresh for munching for months? 
Anyone know?
