Our food pantries take fresh veggies all the time... what is it with the Chicago area??? Carrots, according to my references, can be kept ing the ground until a killing frost. If dug, they require cold, moist storage. Cut off the carrot tops, one inch from the root, and store at 32F at 95% relative humidity. You can put it in a refrigerator, or in a root cellar, with the roots covered in damp sand.
