Edible orchids

Does anyone know what orchids are typically used as garnishes by restaurants?
Waiters and chefs have assured me they're edible (the flowers, not the
staff), if not overly flavorful, and I've eaten them with no ill effects; but there
are no botanists in the kitchens. They don't know what they're putting on the
plate other than that it's "an orchid."
I think I ate a Dendrobium bloom, but I'm not sure. Anyone? And can anyone
name a source that grows the things for consumption, i.e., sans nasty chemicals?
