dumb, tired question

I've had sick kids for a few days and I'm out of caffeine.  Needless to say,
I'm not thinking straight and I'm working on a column about spring gardens.
Can some nice person here please remind me why it's a bad thing for salad
greens to bolt?  I'd put off the column, but it's already overdue.
