I would have to agree that Pro-mix is a great potting mix. Since I have been certified organic though, I haven't been able to use it.

What do you use instead?  Especially for starting seeds?

Again I hate to be so partial....no, no I don't...but Pro-Mix introduced a new line this year that is aimed at the organic gardener.  Now I don't know if it's certified..or if a potting mix can be certified...but they do claim it's organic.
