I think we're talking about two very different things and calling them by the same name. The tunnels I'm picturing are large enough to drive tractors through. They look rather like gutter-connected greenhouses. They vent from the side; the poly can be pushed up nearly to the peak, which is generally 10'- 12' high. Venting prevents (1) excessive heat buildup on sunny days, and (2) excessive humidity. Haygrove is the dominant brand in the UK. I've seen them used to grow everything from lettuce to cherries, in-ground or in various benching systems.
