I've grown red, white and blue potatoes to photograph. The best red fleshed
one for color is Cranberry Red. One note: if you cook them, color will be
lost. The All Blue potato will turn an unattractive gray if boiled. To
retain the color, steam briefly with vinegar in the water or microwave. The
color will dull, but the blue will be retained. Be sure to mention the
differences in flavors amongst the potatoes, too. The All Blue has a nutty
taste.
