I would think that basic greenhouse or houseplant texts would give her enough information to make a good start on learning how to care for plants in enclosed areas. I also think you'll have to give her a pep talk about the necessity of being ruthless with diseased or pest-ridden plants--if you can't cure the problem quickly, you have to get rid of it to prevent problems from spreading.
As for getting plants: a few phone calls to area florists and nurseries would probably yield some good donations, as would calls to area garden clubs. She might be able to snare some volunteer help from garden clubs as well--someone would probably be very happy to come in and teach basic techniques.
