Re: edible ginger
Culinary ginger is a rhizome and resembles that of iris but is not hardy. This summer I set a piece onto potting soil in a clay pot, flat, outside. Only the bottom third of it was covered with planting medium.
It rained all the time. I soon had sprouts. I moved the plant indoors in early fall. It is not beautiful but it is alive with two 16-inch compound leaves. A third fell off.
Culinary ginger is closely related to the 7-foot plant known as pinecone ginger (Zingiber zerumbet) which is used in gardens in Florida and elsewhere. Both types develop red, conelike floral structures.
