My old gooseberries are bland but do not taste rank. Sometimes I make red currant jelly and drop them into it, whole but with no stems, for about ten minutes of boiling, for a nice jam. There is a lot of sugar in the red currant jelly but no pectin is needed. The combo gives flavor to the gooseberries and texture to the jelly.
