I have to defend the organic labelling here. Yes, many small farmers were acting quasii organically without certification, but those of us who took the trouble to get certified over the last few years have paid a small fortune to do so and be beaten out at the market place by people who fudge the rules. Yes, there is a paper trail - inputs, seed sources, and rotation of crops etc. - you really have to work at the idea and be organized (my major failing). What big business has failed to come to terms with, is that people who traditionally have grown organically have a simliar thinking regarding sustainable farming - its more than a posh label that gets bigger bucks (which it doesn't any longer).
