Re: Quinoa


Here is a great quinoa recipe that I have Doreen - got it from a potluck
during a garden club I was speaking at:

Crisp Bacon, Arugula and Apricot Salad

1/3 cup quinoa
3 slices of bacon
Handful of dried apricots, chopped
Handful of arugula
2 tbsp pine nuts, toasted
Salt & pepper to taste

Dressing
1 1/2 tbsp olive oil
1 1/2 tbsp lemon juice
1 tsp Dijon mustard

Cook the quinoa to the directions on the box, cooked the bacon and toast the
pine nuts. Combine all ingredients and dress. Serve warm or room temp.

We are able to buy quinoa in bulk at Central Market or in boxes at Trader
Joes. You are able to find recipes on the foodnetwork.com, but I haven't had
any as good as this one yet. Anything with bacon, arugula and pine nuts -
I'm pretty much sold.
