I always heard that when that little drop of water appeared on the stigma, it
was too late to make a cross.

Joyce,
I have found that what little pollen there is gets rubbed off pretty quickly
by the bees.  There are some varieties, too, that just don't produce much
pollen.  By 9:00 A.M. it's possible there won't be much left.  I usually
collect mine about 6:00 A.M. and let it dry until about 8:00.
