I have seen mature hosta with massive root systems sit in water-filled buckets for one year or more - not their idea of life, but the gardener's slppiness wasn't going to change. These were mature plants, many years old.
Summer heat and rot will chase a hosta in water quickly - if you have to do this regularly, consider a few drops of bleach to give the plans a chance. Best to keep them out of any sunlight, preferrably deep shade or indoors, and low water temps - just like chilling fresh harvested veggies and fruit, lower the temp water the better.
You can soak your plants overnight, as long a they are in cool water and cool temps. Of course any weak plant material, when water-logged, increases the risk of disease and decline.
Remember, they like water, but they also need some "breathing "air in the roots.
