Good drainage.  Most of the herbs are native to the mediterranean area,
similar in climate to the Willamette Valley, and require drought (once
established) to get a strong flavor developing.  Strawberry pots seem
to be about perfect up here, with our heavy clay soil.  In my experience
here in the Portland area, most things don't make it indoors through the
winter... just not enough light.
