personal care home gardens

I am involved with an AmeriCorps Garden Therapy project.  The project will
involve having volunteers plant and care for a garden at a personal care
home with the residents(either for mentally handicapped individuals or
elderly the site has not yet been determined). I am looking for resources
on this topic   (web sites, books, article etc.)  If anyone could pass any
