Lots of gardeners write about concerns that they may get a cucumelon or a
squashaloupe. They're always told that cross pollination does not affect
the fruit, but will affect the seeds, should you choose to save them. I
think this is the source of  your statement that "cross-pollination has
little or no effect on the seeds you'll be eating this year..." That it
will have a major effect is borne out by the seed catalogs' warnings that
"cross pollination between a Super Sweet and a "normal" or sugary enhanced
variety will result in tough, starchy kernels in both types. - Johnny's. Re
open-pollinated corn, Territorial says varieties need to be separated by at
least 1/2 mile or need to be bagged to prevent cross pollination. Another
way to avoid cross pollination is by varying time of planting. In other
words, the corn you eat this year can be affected by this year's cross
