Either will work. Now I have my some of my 4x4 beds divided into 1 ft squares, and just because I'm lazy, I just scatter a bunch of lettuce seeds in one of the squares, and let then do what they want. I pick off a few leaves for a salad, and a few of the older less attractive ones and feed the turtles, and that's all.
