I've done both.  Either will work.  Now I have my some of my 4x4 beds
divided into 1 ft squares, and just because I'm lazy, I just scatter a
bunch of lettuce seeds in one of the squares, and let then do what they
want.  I pick off a few leaves for a salad, and a few of the older
less attractive ones and feed the turtles, and that's all.  In the
summer, I have to shade the lettuce, and on the few cold snaps we have
here in Dallas, I cover them with poly film, and have
salads all year long.
