Hi Tory,
Actually we took lots of them when they were small, to eat fresh.
As the zucchini grower can tell you, we had too many to eat that
small, so we let some get larger, and some get really big. Larger
ones and gigantic ones we used to stuff with bread and sausage, mmm.
The rest we blanched, cut in large chunks, and froze in ziplocs.
We still have one or two bags left, and have had fresh frozen
zucchini all winter. We did not find any of our zukes to be bitter.
Could be the variety, though. It was one from Terr. Seeds.
