I took some large black plastic pots (like you buy perennials in that are
about 8 inches high (2 gallon pots, I think), cut the bottom out, and sunk
them in the ground with about 1 inch sticking up. I filled them with
regular garden soil and planted peppermint and spearmint in them. In two
years, I haven't had a problem with the mint escaping. I do need to dig
them out this year though, since they're getting a bit crowded in the
pots. Leaving part of the top sticking out is important to keep the
runners from getting over the top of the pot.
