Re: cooking from the garden

Martha:
That sounds like a great book.

One of my favorite garden recipes involves asparagus and fresh fish. In the spring, bass and blue gill are very prevalent in our area ponds and small lakes...at the same time as the asparagus!!!

I experimented with several cooking styles and methods. My favorite is this recipe. Cut the aspargus, or not. Place in a microwave or pyrex glass dish. Add one tblspoon of margarine for each pound of asparagus. Cover the container with plastic wrap. Set aside.

Place 4 slices of fish filets in a lightly oiled (olive oil or not) baking dish. The filets are lightly sprinkled with lemon pepper. I use a mix that contains sea salt. Bake at 345 degrees Farenheit for about 5 minutes... or until flaky.

During the last 3 minutes of baking, microwave the asparagus. Your microwave temperature and intensity may vary, so you should experiment with this time. I like my asparagus al dente and hot.

Try this out. I am already hungry!
