Potato Leek Soup

Hello all!

	I just joined this group recently and have enjoyed spending my
mornings reading the postings.  I live in the Sacramento CA area (zone 9)
where it is trying to warm up enough to plant warm weather crops.  I'm in a
community garden where other people have already put in tomatoes, basil,
squash, etc. and are doing terribly (there was actually frost the other
morning!).  I guess that is one way to gauge when to put in crops-let other
people plant early and see what happens!
	Actually, the reason I'm writing is to mention a wonderfully easy
Potato-Leek soup recipe I made and consumed last evening.

	Sautee 1 pound of chopped leeks (this is about 2 large trimmed
leeks) and 1-2 cloves of garlic in 1 Tbsp of olive oil, in a large
saucepan, covered, on medium heat for 5 min.  Add 2.5 to 3 cups of cubed,
peeled potatoes, and 2 cups of fat-free chicken or vegetable stock.  Bring
to boil then turn heat to medium for 15 minutes.  Puree to smoothen, add
back to saucepan, add 2 cups of soy milk or cow's milk (the soy milk makes
it tastier and smoother and doesn't curdle if you cook it too much).  Add
salt and pepper to taste, heat thru and garnish with some minced green
onions (scallions).

	I had this with a fruit plate and some fresh whole wheat rolls.
