Help!! Size of seedling trays?

Help! I`m running out of room underneath my fluorescent lamp, and it`s
time to move 40 onion seedlings out of the 2 margarine tubs and into
their own individual spaces.
What size of tray or container is big enough?
Right now I have 2 different types of tray:
- 1.5 inches by 1.5 inches across, by 2 inches deep;
- 2.5 inches by 2.5 inches across, by 2 inches deep.
Is 2 inches deep enough for a plant to grow properly? I currently have
some broccoli, cauliflower, swiss chard, and onions in the 2-inch deep
trays. Will this be deep enough? Even when I first transplanted them
to these containers, their roots were already long enough to go down
the full 2 inches.
And how wide across should they be? I prefer the 1.5 by 1.5 across,
because they`re so much more space-efficient. But will that be wide
enough?
I have to buy some trays for the 40 soon-to-be-transplanted onions,
but I`ll wait until I get some advice here as to what kind to buy.
I`d imagine that the depth would be more important than the width
across.
Incidentally, some of my transplants are in peat moss cups, and I find
these are too much hassle -- they`re falling apart, a white fungus is
growing on the outside of the cups, and they take up too much room.
