I've done potatoes one per square, using the fill in with soil method
mentioned, yield was about 2 lbs of poatoes per square foot last year. I
even got a decent yield (didn't weigh them) this year when I planted all the
leftover tiny potatoes that never got eaten and had foot long eyes.
