My favorite way is to use hay or straw........after it breaks down over the 
growing season you can flip it in and incorporate into the beds the following 
spring; a new fluffly layer is then put in for the new growing year.  I love 
the way it looks, especially from my 2nd floor bedroom window - the dark 
brown growing beds and the nice tan paths.  You will appreciate it mostly 
after a rain or a good watering, as you can walk on it and not get muddy!
