Shell Beans?

I have been sitting here going crazy trying to think of someone I could ask
about shell beans.  Suddenly realized I must be in a bad fog since I have
the greatest source of information right here :)
Sooooo  please help.  Hubby saw a fresh shell bean in Vermont Bean catalog
he fell in love with and wants me to raise. No problem there it says raise
like snap beans which I have raised.  Problem is how many plants? How do I
know when they are ready to pick? How do I cook them?
Never had any fresh bean before 'cepten snap beans so at a total loss with
the shell beans.
