Hi Toni,
I routinely remove the bottom set of leaves from all my summer
squash. I can't remember why exactly, except it seems to keep
the rest of the plants green. If the leaves are a healthy green,
I'd leave them alone, too. But in my experience, you could remove
up to half of the leaves in a healthy monstrous plant, and see
little effect except perhaps a delay in fruit setting afterward.
