Acorn Squash

My mother-in-law mistakenly picked all my acorn squash, about 4 months 
early.  She thought it was a summer variety and was trying to help.  Now 
she wants to cut them up and stir fry them.  Is that possible, and are 
they edible at this stage of un-ripeness.  They are a light green color.
