I believe it is when the silks turn brown. I waited too long to harvest
my corn, so it was rather starchy. Also, when you pierce a kernel with
your nail it should exude kind of a milky substance. If really in
doubt, just take a bite! Corn is really good raw, right there in the
garden! Good luck.
