Garden huckleberries

I tried these once before and they didn't even grow and then were chewed up
by whatsits, but this year they are huge and loaded with berries. Trouble is
there are bunches in various stages of green/gray to purple/gray and I don't
know just how purple they should get before picking or if they should be
easily picked like raspberries or not. Anyone know about them or how to use
them once they are ripe? Any help greatly appreciated.
