I am using 6x16 x 8 in high cinderblocks, just one high, around a rectangle with the holes facing up.  I have not used mortar.  I make a little trench around the edge to place the blocks in by drawing soil up into the middle.  If you arrange them as tightly as possible, and they are down a little below the surrounding sod level, you shouldn't have any trouble with them shifting.  I have not had any soil leak out.
 
In our yard the gray-white color is ok as the house is white, and we have the foundation painted gray.  And during the growing season plants tend to cascade and soften the hard edges so it doesn't look bad.  But if you are concerned about the color, how about the red-brick colored cinderblocks?  In the book The Organic Rose Garden they show beds made by standing those thin slab-type blocks on end in a circular formation.  They are about 8x16 but only about an inch thick, and in my area they come in the red color.
