I'm not sure why your garlic dried out--usually the problem most people have is it gets too moist and spoils! You may want to check out a GREAT garlic website--it used to have "This Page Stinks!" on its logo! Anyway, The Garlic Page can be found at www.garlicpage.com, and it may give you some good ideas for garlic usage. It has a lot of agricultural info too which might help with the drying problem. One product we always have in our refridgerator is chopped garlic that we buy in quart size jars from the warehouse store. I can't remember what it's in--mostly just its own liquid I think. It is great for adding to recipes--in my house I use it in heaping spoonfuls. Oh, and if you can't think of anything else to do with the surplus, my husband eats the stuff raw on the weekends, so I know someone who could decimate your supply in short order! Good luck!
