They are so easy! At least here is our experience. I had thrown some old
potatoes (sprouting) into the compost bin and they started growing like crazy!
I have a 3-bin thing so we just let the potatoes grow in the one bin. After
several weeks I needed that room so dug them up & there were 7 lbs of little
potatoes we got from there! Some were as tiny as marbles, some were about
softball size.
Anyhow, to do it more properly I understand you put a piece of potato (at
least one "eye") in a hole & fill in soil around it as it grows, since you
don't want the potatoes exposed to light at all. There was also a post about
growing them in a garbage can, did you see that? It sounds great, you plant
near the bottom with a little soil then fill as it grows, and you'll have a
whole can full of potatoes, which you just dump out on the ground & harvest! I
can maybe find better directions if you're interested. We're going to try it!
