Arugula is my *favorite* salad green. It has long, narrow oak-shaped
leaves with a very distinctive and potent nutty flavor. I'm currently
growing a variety that has a definite spicy hot edge to it also. Like
most greens it gets increasingly bitter as the weather gets hotter, but
I like it that way! The aroma/flavor is so strong that it fills the air
around the plant when you cut a few leaves. It's used extensively in
Italian cooking, both raw and cooked, and appears frequently in mesclun
salad mixes. I think it's pretty much idiot-proof to grow...my evidence
is that I've grown it successfully two years running!
