We have had good luck growing sweet potatoes in those plastic compost bins
that form a circle about 3 feet high with the holes in the sides.  We layer
with soil, old hay, compost, whatever.  Harvesting is easy - just lift off
the plastic thing.  I suppose you could do regular potatoes that way too.
