Do NOT knock off the potato sprouts!!! That's the new plants! Stick them
in the ground ASAP! In fact, "greening" --the process of putting seed
potatoes in the warm light to induce sprouting-- is the best way to get your
spuds off to a fast start in the ground. For others with seed potatoes,
here's how to green:
Lay seed potatoes in a single layer in a shallow box or pan. Place near a
sunny window where the temperature is about 70F. Within a couple of days,
the spuds will turn green and sprouts will emerge from eyes. Plant before
the sprouts are an inch long to avoid damaging them.
