I've done this at various times, You need to leave enough leaves on
it so it will continue to grow. The smaller leaves may be more tasty
but if you wait they will get larger before harvest. You do want to
make sure you get a good harvest before it bolts (hot weather makes
it go to seed). At the very least leave two leaves on the plant after
picking. Oh, and the roots are shallow so pinch the leaves as
opposed to pulling them.
