leggy chile peppers?

I am growing several types of chile peppers from bought seedlings.
Several of them are now a foot tall. One, an anaheim, has a fair number
of branches and somewhat 'bushy'. The others, a true pasilla and an
ancho, are very tall but only have a few sets of branches. In all other
respects they are healthy looking. They all have a few flowers.
They get lots of full sunlight. Is this normal for some varieties? Is
there something I should do to encourage bushiness? I've never seen it
recommended (as with eggplant and basil) that you pinch the growing tip.
Would this be a good or bad idea? (I'm inclined to think it might be a
bad idea since in my experience chiles seem to be somewhat determinate).

p.s. To all those that replied about the early girl whose growing tip I
thought I had pinched. It is doing great. It was a sucker after all.
