Sarah,
You didn't include your Climate Zone or location, so I'm guessing you are in
the south or at least Zone 6.  Cauliflower and Brussels sprouts are best
grown as fall crops in zones 5-10.  Even here in Illinois, we direct seed
these crops in late July so that they will mature in the cool days of fall.
Brussels sprouts, in fact, taste better when they have been hit with a frost
or two.  The cold sweetens the sprouts.
