Bill,
Broccoli is one of those veggies that must be blanched before freezing or it
deteriorates in the frozen state into a mushy mesh when thawed.  The easiest
and most nutritious way to blanche is to do so in the microwave.  Cut cut
the heads into pieces, place in a dish with a lid and add a tablespoon or
two of water.  Microwave on high for 4 minutes per pound.  Dump into ice
water to stop the cooking.  Drain, bag and then freeze. Let some of your
broccoli plants go to flower to attract pollinators.  Cole crop flowers are
some of the most magnetic in attracting them.
